WAFFLE TRAINING COURSE IN PARIS

Get ready — 2025 is going to be the year of the waffle.
We’re seeing them everywhere: new waffle-themed restaurants, franchises, waffle bikes, media coverage, and even chefs revisiting the classics.
But while it’s easy to find a crêpe training in France, waffle training courses remain rare.

That’s exactly why we’ve created a 1-day intensive workshop to learn how to make Brussels waffles, Liège waffles, and bubble waffles.
This course focuses on the essentials — batter, cooking, and equipment — with zero fluff.

What You Need to Know

  • Location: Paris
  • Duration: 1 full day – from 10 a.m. to 4 p.m. (with a lunch break — yes, waffles are on the menu)
  • Group size: 1 to 3 people from the same team
  • Flat fee: €750 excl. VAT (for 1, 2 or 3 people) – includes all supplies (ingredients, recipe sheets, technical documents & apron)

Key Topics Covered in the Program

  • Project overview & goals: We begin with a personalized discussion of your concept and objectives. Every training is unique — whether you're planning to open a restaurant, launch a food truck or food bike, sell at markets, or run waffle stands for events, the content will be tailored to your project.

  • Brussels waffles: Explore and compare several sweet waffle batter recipes; learn how to make savory versions (using wheat or gluten-free buckwheat flour); cooking techniques (temperature, timing); plating and presentation.

  • Liège waffles: Prepare the dough, knead, rest and proof, shape into dough balls; master the cooking process (temperature, timing); plating and presentation.

  • Bubble waffles: Learn to make this playful variation — round puffs of batter connected together, rolled into a cone and filled with ice cream, fruit, whipped cream, and more.

  • Optional add-on: Making whipped cream with a siphon or Mussana machine (on request).

  • Equipment: Everything you need to know about selecting, seasoning, cleaning, and maintaining waffle irons. Each participant will work with a professional waffle iron — one per trainee.

And of course, we'll answer all your questions, like:

  • What ingredients should I buy?
  • How long can waffle batter be stored, and how?
  • What are the basic hygiene and safety rules I need to follow?
  • How do I keep Nutella warm during service?
  • How do I calculate my cost price?

Unlike crêpe-making, which usually requires many hours of post-training practice, you’ll be ready to get started with waffles much more quickly.

Please note: The following topics are not covered in detail during the group course, but I’d be happy to assist you with them through individual consulting:

  • How to launch a waffle business (restaurant, food truck, mobile sales): administrative steps, financing, location scouting, renovations, compliance, communication, and management
  • How to recruit a cook
  • Menu development, purchasing, storage & logistics
  • HACCP training and food safety regulations
  • Making homemade toppings (fruit compote, salted butter caramel, grilled mushrooms, vegetables, etc.)
  • Special diets: organic, gluten-free, allergies & intolerances, drinks (cider, perry, apple juice)

WAFFLE POPS & STICK WAFFLES...

Waffles are trending — and in recent years, several creative shapes have appeared:

  • Waffle pops: pointed triangle-shaped waffles served on a stick, often dipped in melted chocolate.
  • Stick waffles: heart-shaped or fun-molded waffles on flat sticks, usually made with Liège or Brussels-style dough.

These versions are not traditional, and are typically made using instant mixes (see my article in French on crêpe mixes).
Each type also requires a dedicated waffle iron — for example, a professional stick waffle iron costs around €1,000 excl. VAT, and I do not currently own one.

For these reasons, we will discuss these waffle styles during the training, but we won’t make them.
However, the homemade batter I’ll teach you for Brussels waffles can absolutely be adapted if you decide to offer them later.

This allows you to train several team members at once (e.g. seasonal staff) and practice using your own equipment.
